HOOSIER SLAW | |
2 lbs. fresh cabbage, shredded 1 cup apple vinegar 2 cups mayonnaise 1 cup apple (fresh apple sauce) 1 cup water 1/8 cup chopped white onion 1 tsp. salt 2 tsp. pepper 1/2 cup water chestnuts (optional) Thoroughly wash and rinse cabbage, then shred. Set aside. Combine vinegar, applesauce and water and bring to slow boil. Then add cabbage, and mix well. Refrigerate for 30 minutes. After mixture has chilled, add onion, mayonnaise and salt and pepper, stirring all together well. Bring to quick boil. Remove from heat, add water chestnuts if desired, and serve hot.
