LEMON LASSIES 
COOKIES:

2 1/2 c. sifted flour
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1 c. sugar
1/2 c. butter, softened
1/4 c. molasses
1 lg. egg

FILLING:

1/2 c. sugar
2 lg. eggs, slightly beaten
1 tbsp. grated lemon rind
1/4 c. lemon juice
1 tbsp. butter
1/8 tsp. salt
1 c. flaked coconut

1. To Make Cookies: Sift together flour, cinnamon, baking soda and salt. Beat sugar and butter in a large bowl with electric mixer until fluffy. Beat in molasses and egg. On low speed, gradually beat in flour mixture. Chill 3 hours or overnight.

2. To Make Filling: Cook and stir sugar, eggs, lemon rind, lemon juice, butter and salt until thick. Remove from heat. Stir in coconut; cool.

Heat oven to 350 degrees. Have baking sheets ready. Divide dough into four equal parts. Roll one part at a time into a 15" x 2 1/2" strip. Spread one fourth of the filling on 1/2 of each strip spreading to 1/4" of edges. Fold dough over filling. Seal edges. Cut into bars. Place on baking sheets. Bake 12 to 15 minutes. Cool on wire racks.
