1/4 lb. frozen green peas 2 c. rice 1 med. onion 4 whole cloves 2-3 whole cardamom or 1/2 tsp. cardamom seeds 3 1/2 to 4 c. water 1 tsp. cumin seed, whole 2 tbsp. turmeric 3-4 tbsp. vegetable oil 1 (2 1/2 inch) piece cinnamon stick 8-12 peppercorns 1-2 tsp. salt Preheat oven to 300 degrees. Soak rice in cold water for an hour. Heat vegetable shortening, add spices EXCEPT THE TURMERIC and fry for 5 minutes. Add 4 cups of water, bring to a boil, add rice and cook until all the water is absorbed. Add peas and turmeric. Mix and cover the pan. Cook until almost all the water is absorbed. Place in oven already preheated to 300 degrees. Cook for 15 minutes. Slice the onion and fry in a skillet with little vegetable shortening until onions are dark brown. Serve rice with dark brown fried onion and its juice. Spread evenly on the platter over the contents. Serves 5-6 people. |
