ONION SOUP WITH CHEESE 
5 med. onion
1/4 c. butter
1 tbsp. flour
1 1/4 qt. beef stock
Toasted rounds of French bread
Grated cheese of your choice

Peel and slice onions, separating rings. Heat 1 1/4 cup butter in large saucepan, add onions and cook gently over low heat, stirring constantly with wooden spoon. Sprinkle flour in and blend well. Gradually pour in beef stock. Bring to a boil, cover and simmer for 20 minutes.

Serve topped with toasted rounds and grated cheese.
