APPLE COBBLER 
FILLING:

5 c. sliced, peeled tart apples (about 1 1/2 lb.)
3/4 c. sugar
2 tbsp. flour
1 tbsp. lemon juice
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/4 tsp. salt
2 tbsp. butter

BATTER:

1/2 c. unsifted all-purpose flour
1/2 c. sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 tbsp. butter, softened
1 egg, slightly beaten

Making Filling: In medium bowl, combine apples, 3/4 cup sugar, 2 tablespoons flour, the lemon juice, vanilla and cinnamon, 1/4 teaspoon salt and 1/4 cup water Turn into 8x8x2-inch baking dish. Preheat oven to 375 degrees.

Making Batter: In medium bowl combine all batter ingredients; beat with wooden spoon until smooth. Drop in 9 portions over filling, spacing evenly. Batter will spread during baking.

Baking: Bake 35-40 minutes or until apples are tender and crust is golden. Serve warm with cream. Makes 9 servings.
