CURRIED MIXED VEGETABLES 
2 (10 oz.) pkgs. frozen mixed vegetables
2/3 c. onion, sliced
1 clove garlic, minced
2 tsp. curry powder
1/3 c. butter
1/4 c. coconut
1/2 tsp. chili powder

Cook frozen vegetables as directs on package. Saute until lightly browned: onion, garlic, curry powder, chili powder in butter. Add vegetables and coconut. Serves 4. Can be oven baked and reheated.
