OLD-FASHIONED RAISIN BREAD PUDDING | |
6 slices Sun-Maid raisin bread 2 c. milk 2 tbsp. butter 2 lg. eggs 1/4 c. sugar 2 tsp. vanilla 1/4 tsp. salt 1/4 tsp. cinnamon Slice raisin bread into 3/4 inch pieces; place in a shallow buttered 1-quart baking dish; set aside. Heat milk with butter until hot and butter is melted. (Do NOT boil.) Beat eggs with sugar, cinnamon, vanilla and salt. Add hot milk mixture, stirring constantly; pour over the bread. Allow to stand 5 minutes. Sprinkle with nutmeg. Set baking dish in pan with hot water to half the depth of dish. Bake, uncovered, at 350 degrees about 50 minutes or until custard is set. Serve warm or cold. Makes 4-6 servings. Recipe doubles easily and delicious served with Golden Lemon Sauce. GOLDEN LEMON SAUCE: 1/2 c. sugar 2 tbsp. cornstarch 1 c. water 1/4 tsp. grated lemon peel 3 tbsp. lemon juice 1/4 c. butter In a small saucepan, combine sugar and cornstarch. Blend in water, lemon peel and lemon juice. Cook over medium heat, stirring constantly until thickened. Blend in butter until melted. Serve warm. Makes 1 1/4 cups. ORANGE SAUCE: Omit water, lemon peel and lemon juice. Substitute 1 1/4 cups orange juice. |
