MIXED FRUIT CUPCAKES 
2 lg. eggs
1/2 c. soft butter
3/4 c. applesauce
1/2 c. preserved pears
1 tsp. vanilla extract
3/4 c. milk
1 1/2 c. sugar (granulated)
1/2 tsp. cinnamon
1 sm. box raisins
3/4 c. oatmeal flakes
2 1/4 c. self-rising flour (sifted)

Mix eggs, butter, applesauce, milk and vanilla extract, chopped preserved pears. Beat until well blended or smooth. Add flour, cinnamon, raisins and oatmeal flakes. Mix until mixture is smooth. Drop into paper cups. Bake in preheated 375 degree oven, about 10 minutes or until light brown. Yields: about 24 cupcakes.
