RED VELVET CAKE 
2 1/2 c. cake flour
1 1/2 c. sugar
1 1/2 c. Wesson oil
2 eggs
1 c. butter milk
1 tsp. salt
1 tsp. baking soda
1 tbsp. vinegar
1 tsp. vanilla flavor
1/4 c. red food coloring
1 tsp. cocoa

Cream eggs, sugar and Wesson oil together. Add buttermilk, vinegar, flavor and red food coloring to mixture. Sift flour, salt, soda and cocoa together. Mix all sifted ingredients to your egg mixture; beat for 5 minutes at high speed.

Well grease 2 (9-inch) cake pans or Bundt pan and flour cake pans, then pour in mixture. Bake at 350 degrees for 30-40 minutes.

FROSTING (ICING) :

1 tbsp. milk
2 pkgs. cream cheese
2 boxes confectioners sugar
2 sm. bags pecans (chopped)
