MOM'S THANKSGIVING ROLLS
1 cup (2 sticks) butter or shortening
1 cup sugar
1 tsp. salt
1 cup boiling water
2 pkgs. quick rise yeast
1 cup warm water (for yeast)
2 eggs, lightly beaten
6 cups all-purpose flour

Combine shortening, sugar, salt and boiling water in a glass bowl and mix with a plastic or wooden spoon til shortening is mostly melted. Do not use metal utensils!

Meanwhile dissolve yeast in warm water, then cool to lukewarm before adding yeast with first mixture. Add eggs, then flour, one cup at a time and mix well. Cover and refrigerate, it will take several hours to rise in refrigerator (and will keep several days). Best to make it the night before.

When ready to use, roll on lightly floured board and cut out. Allow to rise at least 1 hour in a draft free warm place. Bake rolls at 375°F until brown.
