MANHATTAN TUNA CHOWDER | |
2 tbsp. salad oil 1 sm. onion, minced 1 (28 oz.) can tomatoes in puree 1 (16 oz.) pkg. frozen mixed vegetables 1/2 tsp. dried basil 1/2 tsp. sugar 1 (13 oz.) can tuna In 4-quart saucepan over medium heat, in hot salad oil, cook onion until transparent but not brown. Add next 4 ingredients and 1 1/2 cups water; heat to boiling. Over low heat, cover and simmer 10 minutes. Add drained tuna; cook 5 minutes or until vegetables and tuna are hot. Makes 6 servings. About 240 calories per serving. |
