RIB ROAST 
2 4 rib roast. Short ribs removed at room temperature. Preheat oven to 500 degrees. Sprinkle flour over roast and rub in, especially on fat. Salt and pepper.

ROAST CHART:

3 ribs - 8-9 lbs. - 40 to 45 minutes 4 ribs - 11-12 lbs. - 55 to 60 minutes

Time exactly, then turn off oven - DO NOT open door for 2 hours or more. Potatoes, peeled and quartered may be added about last 15 minutes of roasting time.
