SEAFOOD CIOPPINO | |
1/2 c. oil 3 cloves garlic 1 c. dry white wine 1 tsp. oregano 1/2 tsp. pepper 1 1/2 tsp. salt 1 lb. can plum tomatoes 1 (6 oz.) can tomato paste 1 c. snipped parsley (or 1/4 c. dried) 1 lobster tail (cut into pieces, 2") 1 lb. Alaskan snow crab claws & legs 12 cherrystone clams, scrubbed 12 mussels, scrubbed 1 lb. shrimp, shelled & deveined 1 lb. scallops (Ocean), not bay As far as the seafood you can omit or add more or less of each item. And if you want to omit the crabs add fish (chunk not flake type) instead. You can also double the other ingredients for a large crowd. Cook garlic in oil in large saucepan, add pieces of lobster, cook for 3 minutes. Add oregano, salt, pepper, tomatoes, tomato paste, wine and bay leaves. Bring to boil, cover and lower heat to simmer and cook for 20 minutes. Add clams, crabs, mussels and parsley; bring mixture to a boil. Then add shrimp and scallops, let boil for 2-4 minutes, depending on size of shrimp. Reduce heat to simmer, cover and cook for 5 minutes or until shrimp are cooked and clams/mussels are opened. Serve with linguini and Italian bread. |
