BAKED BROCCOLI CROQUETTES 
12 Saltine
4 oz. shredded Swiss cheese
2 lg. egg whites, lightly beaten with fork
2 1/2 c. cooked broccoli florets, coarsely chopped
1 1/2 c. cooked coarsely chopped cabbage
12 oz. hot mashed potatoes
1 tbsp. and 1 tsp. butter, melted
1/2 tsp. salt
1/8 tsp. pepper

Preheat oven to 325 degrees. Spray 18 muffin cups.

CRUMBS: Crush Saltines and add 2 ounces of cheese in a plastic bag. Spread crumbs evenly on waxed paper.

DOUGH: Combine egg whites, broccoli, cabbage, potatoes, cheese, butter, salt, and pepper until well mixed. Shape into 1 1/2 inch ovals (1/4 cup). Roll in crumbs. Place in muffin cups. Bake 40-45 minutes.
