CHEESY BEEF CORNBREAD 
1/2 lb. ground meat
1 c. yellow cornmeal
3/4 tsp. salt
1/2 tsp. baking soda
1 c. milk
1 (17 oz.) can cream style corn
2 eggs, beaten
1/4 c. vegetable oil
2 c. (8 oz.) shredded cheese
1 onion, finely chopped
2 tbsp. jalapeno peppers, chopped

Cook ground beef until browned; drain well and set aside.

Combine 1 cup of cornmeal, salt and soda; mix well. Add milk, corn, eggs and oil; mix well.

Pour half of batter into lightly greased 12x8x2 pan. Sprinkle with cheese, onion, peppers and ground beef. Top with remaining batter. Bake at 350 degrees for 50 to 55 minutes. Yield: 6 generous servings.
