PARMESAN POTATO CASSEROLE | |
12 med. potatoes, peeled and quartered 1/2 c. mayonnaise 1 c. milk 3 lg. eggs, lightly beaten 1/2 c. grated Parmesan cheese 1/4 c. chopped parsley 1 tsp. salt 1/2 tsp. pepper Heat oven to 350 degrees. Lightly grease a shallow 3 quart baking dish. Cook potatoes in water to cover until done, 15 to 25 minutes. Drain well. Add butter, mash until melted. Add milk, eggs, cheese, parsley, salt and pepper. Mash until smooth. Pour into prepared dish. Bake uncovered for 45 to 50 minutes. |
