PORTUGUESE BREAD | |
5 lbs. flour 1 heaping tbsp. salt 1 pkg. yeast, dissolved in water Water as needed 1/4 lb. melted butter Dissolve yeast in lukewarm water with salt. Place flour in pan; add dissolved yeast and blend together, adding water as needed. When dough is well blended, add melted butter, kneading until all is well blended. Cover with warm cloth and set aside in warm place to rise for about 4 hours. Grease and flour bread pans. Take a part of dough, place on cloth which has been floured with fine meal flour and form into size desired and place in pans. Cover and allow to rise for about 1 1/2 hours or until double in size. Baste top of dough with milk for a golden crust and cut top center of dough with a sharp knife dipped in hot water. Bake in oven for 30 minutes at 400 degrees. When bread is taken from oven, it should be removed from pan and covered well until it has been cooled. A damp cloth should be placed on top of bread to help soften crust. Each persons stove may vary as to temperature and cooking times. Care should be taken in this regard. |
