PARMESAN CHICKEN 
1 (2 1/2 to 3 lb.) whole chicken fryer, skinned & cut up
or 4 breasts or 6 legs (or whatever your family likes)

GARLIC BUTTER:

1/2 cup (1 stick) butter
2 tbsp. garlic powder (or 2 cloves crushed garlic)

Melt butter in 9x13-inch baking dish and add garlic. Set aside.

PARMESAN CRACKER COATING:

1 cups crushed crackers (saltine)
1/4 cup Parmesan cheese
1 tsp. salt
1/8 tsp. pepper
1/4 tsp. poultry seasoning
2 tsp. parsley flakes
1/4 cup crushed almonds (optional)

Combine crackers, cheese, salt, pepper, seasoning, parsley and crushed almonds (if desired).

Dip chicken in garlic butter and coat in cracker mixture. Place meaty side up in baking dish.

Bake at 375°F for about 1 hour or until chicken is crispy (160°F internal temperature).

Serves 4.
