SWEET `N SOUR BEEF 
1 can (8 oz.) pineapple chunks
1 c. cubed, cooked beef (leftover roast)
1/2 green pepper, cut in thin strips
1/2 onion, cut in thin strips (or 1 sm. onion)
2 tbsp. oil
1/2 c. brown sugar, packed
1/2 c. water
1/3 c. ketchup
3 tbsp. vinegar
2 tbsp. cornstarch
Hot rice, cooked

Drain pineapple, reserving juice. Set aside. In large skillet, saute beef, green pepper and onion in oil. Combine brown sugar, water, ketchup, vinegar, cornstarch and pineapple juice in saucepan. Bring to boil, stirring constantly until thickened. Pour over beef mixture. Gently stir in pineapple chunks. Simmer 15 minutes. Serve over rice. Makes 2 servings.
