BEEF & VEGETABLE STEW 
1 lb. beef stew or ground beef
1/2 c. whole kernel corn
1/2 c. cut okra
1/2 c. green peas
1 c. chopped onion
1/2 c. fresh sliced carrots
1 c. canned tomatoes
1/2 c. chopped celery
1/4 c. lemon juice
1 tbsp. black pepper
1/2 tsp. thyme
1/2 tsp. basil
2 tbsp. butter
2 tbsp. vinegar
3 1/2 c. water
1/2 tsp. garlic powder

Cut stew meat into small pieces. Brown meat in melted butter in large pot. Add remaining ingredients. Simmer for 1 1/2 to 2 hours. (Soup may need additional water while cooking, if so add 1/2 cup water at a time, stirring after water is added.)

Makes 8 servings. 1 serving = 1 cup. 1 serving is counted as 2 ounces meat and 1 regular salted vegetable.
