STRAWBERRY LOAF 
2 eggs
1/2 c. vegetable oil
2 c. strawberries, sliced
1 3/4 c. flour
1 tsp. baking soda
1 c. sugar
1/2 c. chopped walnuts or pecans

With an electric mixer, beat the eggs and oil in a large bowl. Add the berries and beat at low speed until the berries are just broken up. Add the flour, baking soda, and sugar. Beat at low speed until batter is smooth and bits of berries remain. Fold in the nuts. Pour into a greased 9x5x3 inch pan. Bake in a preheated 350 degree oven for 1 hour. Cool in pan on wire rack for 10 minutes, and then remove from pan. Especially good served with cream cheese.
