CREAM OF BROCCOLI SOUP 
2 lb. bag broccoli
4 stalks chopped celery
1 onion
2 tbsp. chicken base

Cover with water and cook until tender; drain off half of water and save. Put broccoli in beaten and beat. Return to stove and add 1 quart half and half or whole milk.

ROUX:

1 lb. butter
1 c. flour

Melt butter and add flour. Add to soup to thicken. If too thick, add some of water you saved.
