ZUCCHINI CAKES | |
3 c. shredded unpeeled zucchini 1/2 c. shredded Cheddar cheese 3 tbsp. snipped parsley 1 clove garlic, finely chopped 1 egg, beaten 1 tsp. salt 1 c. Bisquick Mix ingredients. Heat vegetable oil to 370 degrees in 10-inch skillet, use at least 1/2 inch oil. Drop mixture by tablespoons into hot oil. Fry until golden brown. Makes 2 dozen cakes. |
