A VERY SPECIAL PUMPKIN PIE | |
1 unbaked 9 inch pie shell 1 c. mashed cooked pumpkin 3 eggs 1/2 c. packed brown sugar 1 tsp. cinnamon 1 tbsp. flour 1/2 tsp. each salt, ginger, nutmeg 1 1/2 c. hot milk Prepare pie shell with high fluted edge. Combine all ingredients, except 1 egg white in mixing bowl. Beat remaining egg white until soft mounds form. Fold into pumpkin mixture. Pour into unbaked pie shell. Bake at 450 degrees for 10 minutes, then at 375 degrees for 20 to 25 minutes or until knife inserted halfway between edge and center comes out clean. |
