BAKED LEMON CHICKEN 
4 chicken breasts (without bones & skin)
1 sm. onion, chopped
2 tbsp. chopped fresh dill
1 tsp. grated lemon rind (fresh)
1/4 tsp. ground nutmeg
3 tbsp. fresh lemon juice

Place chicken breasts in an 8 inch baking dish. Sprinkle with lemon rind, onion, dill and nutmeg.

Combine lemon juice with 2/3 cup cold water. Pour over chicken. Cover and marinate at least 1 hour or overnight in refrigerator.

Preheat oven to 325 degrees. Bake chicken uncovered for 30 minutes, basting frequently with pan juices. Enjoy.
