APPLE COCONUT CAKE 
CAKE:

3 c. self-rising flour
1 c. vegetable oil
3 eggs
2 1/4 c. sugar
2 tsp. vanilla extract
3 c. peeled apples, chopped
1/2 c. coconut

ICING:

1 stick butter
1 (8 oz.) pkg. cream cheese
1 1/2 c. powdered sugar
1 tsp. vanilla

Combine oil, eggs, sugar and vanilla; beat at medium speed of mixer for 2 minutes; add flour. Beat at low speed until blended. Fold in apples and coconut. Bake in 3 (8 inch) round cake pans for 20 to 25 minutes or until it springs back when lightly touched. Cool in pan 10 minutes. Remove from pan and cool completely. Ice with cream cheese frosting.
