MARINATED SALTED COD 
1 lb. boneless skinless salted cod
1/3 c. olive oil
3-4 cloves garlic
1 lg. onion
2 tbsp. dried parsley
1 tsp. crushed red pepper
White vinegar to taste

Soak fish overnight. Next day change water and cook over low. Boil 30 minutes. Serve warm and allow to cool. Remove fish, place in bowl and add olive oil, parsley, pepper, garlic and onion sliced thin.

Mix water and vinegar to your taste just to cover the fish. Let sit at room temperature 2-3 hours. Stir fish a few times. Great with boiled potatoes, broccoli, chick peas and fresh salad.
