BEEF COUNTRY PIE 
Crust:

1/2 c. (4 oz.) tomato sauce
1/2 c. bread crumbs
1 lb. ground beef
1/4 c. onions, chopped
1/4 c. green peppers, chopped
1 1/2 tsp. salt
pepper
oregano, if desired

Combine all ingredients in a bowl and mix well. Then pat the meat mixture gently into the bottom and sides of a greased 9-inch pie plate.

Filling:

1 1/3 c. minute rice
1 1/2 c. (12 oz.) tomato sauce
1/2 tsp. salt
1 c. water
1 c. cheddar cheese, grated

Combine rice, tomato sauce, salt, water and half of the cheese. Spoon into the meat crust. Cover with aluminum foil. Bake at 350°F for 25 minutes. Uncover, top with remaining cheese and continue baking for another 10 to 15 minutes.

Serves 5 or 6.
