CHICKEN WITH LEMON AND HERBS 
4 tbsp. butter
1 c. chopped fresh mint
1 dill and parsley in equal portions or to taste
2 garlic cloves, minced
6 boned chicken breasts, skinned, halved about 4 1/2 lb.
2 lemons

Preheat oven to 350 degrees. Mix herbs and garlic. Flatten breasts. Arrange breasts on foil and season with salt and pepper. Sprinkle with herbs and garlic mixture. Slice lemon and place 2-3 slices on each breast. Dot with butter. Seal packets and bake 30 minutes.
