EGGPLANT CASSEROLE 
1 eggplant
1 lb. ground beef
1 onion (chopped or sliced)
1 c. tomato sauce
1/2 tsp. garlic salt
2 eggs
1 can green beans
1 1/2 c. creamed cottage cheese
2 tomatoes, sliced
1/4 c. Parmesan cheese
Salt to taste

Peel, dice and cook eggplant (10 minutes); drain. Cook ground beef and onion together, add cottage cheese, garlic salt, eggs and eggplant. Drain beans and put in bottom of casserole dish, add mixture, cover with tomato slices, sprinkle with cheese. Bake at 350 degrees for 30 minutes.
