CHOCOLATE TRUFFLES 
4 oz. semi-sweet chocolate bits
1/4 c. unsalted butter
3 tbsp. milk
1 lg. egg yolk

Melt bits with milk. Add butter and stir until butter melts. Set aside to cool. Add egg yolk, stirring to blend well. Refrigerate until firm enough to make filbert-size balls. Roll in sweetened cocoa to coat. Store in cool place. Makes 16-18.
