CINNAMON OATMEAL MUFFINS 
2 tsp. baking powder
1 c. flour
1/2 c. sugar (or more)
1 1/2 tsp. cinnamon
1/2 tsp. salt
1 c. oatmeal
2/3 c. milk
1 egg
1/2 c. oil

Preheat oven to 400 degrees. Combine dry ingredients. Add milk, egg and oil. Bake 15 to 20 minutes. Great for breakfast.

Made this recipe two times. The first time I followed the recipe exactly how it is above and they came out good, but it felt like it needed something. The second time I made it I made a vegan version, and to my surprise it was so much better!! Use almond milk instead of milk, and 4 ounces of applesauce instead of egg. I also added cut up apples to the mix. So yummy!! Vegans and non-vegans will enjoy

Good recipe. I followed the recipe exactly except substituted whole wheat flour. Quick and easy! I would use this as a good "base" muffin recipe, and add in some extras - chocolate chips, walnuts, blueberries, raisins, etc. On it's own it's good but I think it needs something extra to make them really tasty :)
