REUBEN CASSEROLE 
1 lb. sauerkraut
1/4 c. onion
1/4 c. parsley
1 tsp. caraway seed
8 oz. Swiss cheese
2/3 c. 1000 Island dressing
1/2 lb. corned beef
3 slices rye bread
1/4 c. butter

Combine drained sauerkraut, chopped onion, parsley, and caraway seed. Layer half of sauerkraut mixture, half of shredded cheese, 1/3 cup dressing, half of sliced corned beef. Repeat. Toss cubed rye bread in melted butter and sprinkle on top. Bake at 375 degrees for 35 to 40 minutes.
