GRUYERE CHEESE RING 
1 c. milk
1/2 c. butter
1 c. flour
4 eggs, slightly beaten
1 c. shredded Gruyere cheese (about 3 oz.)

Heat oven to 400 degrees. Heat milk and butter to a rolling boil in a 2-quart saucepan. Stir in flour. Stir vigorously over low heat until mixture forms a ball, about 1 minute. Remove from heat. Beat in 4 eggs all at once. Continue beating until smooth.

Fold in cheese. Drop dough by tablespoons (about 10 in all) onto a greased cookie sheet, forming an 8-inch ring. Bake until puffed and golden, 50-60 minutes. This has the consistency of a popover.
