BANANA BLUEBERRY BREAD 
1/3 c. shortening
2/3 c. sugar
3/4 tsp. grated lemon rind
1 egg, beaten
1 3/4 c. flour (sift before measuring)
2 tsp. baking powder
1/4 tsp. baking soda
2-3 ripe bananas to make 1 c.
1/2 c. fresh blueberries

Blend shortening, sugar and lemon rind until creamy. Beat in egg. Sift together flour, baking powder and baking soda. Add the sifted ingredients in about 3 parts to sugar mixture alternately with banana pulp.

Beat batter until smooth after each addition. Fold in blueberries which have been sprinkled with flour. Put batter in greased bread pan (4 x 8 inch). Bake at 350 degrees for 1 hour.
