APRICOT BARS | |
3/4 c. butter 1 c. sugar 1 egg 2 c. flour 1 tsp. vanilla 1/2 tsp. baking powder 1 1/2 c. coconut 1/2 c. chopped pecans 1 (12 oz.) jar apricot marmalade In large bowl, cream melted butter and sugar, beat in egg and vanilla. Add flour and baking powder, then coconut and nuts. Press 2/3 of dough into 9x13 inch pan. Spread with the apricot marmalade; crumble rest of dough on top. Bake at 350 degrees for 35 minutes until golden brown. Cool, cut in 36 bars. |
