LEMON MERINGUE PIE 
PUDDING INGREDIENTS:

4 c. sugar
1 c. cornstarch
4 c. water
8 egg yolks
1/2 c. melted butter
1 1/3 c. lemon juice

(This is enough pudding for 2 pies). Heat water, sugar and cornstarch in microwave, whipping with wire whip occasionally until thick. Add egg yolks, butter and lemon juice and heat again in microwave 2 minutes. Let cool. Spoon into baked pie shells. Let set while you make meringue.

MERINGUE:

4 egg whites
1/4 tsp. cream of tartar
1/4 tsp. salt
1/2 tsp. vanilla
1/2 c. sugar

Combine all meringue ingredients and whip with mixer on high speed until stiff peaks form. Top pies with meringue. Bake for 10 minutes at 350 degrees.

Since microwave ovens vary in power, you may need to adjust your cooking time.
