LEMON MERINGUE PIE | |
PUDDING INGREDIENTS: 4 c. sugar 1 c. cornstarch 4 c. water 8 egg yolks 1/2 c. melted butter 1 1/3 c. lemon juice (This is enough pudding for 2 pies). Heat water, sugar and cornstarch in microwave, whipping with wire whip occasionally until thick. Add egg yolks, butter and lemon juice and heat again in microwave 2 minutes. Let cool. Spoon into baked pie shells. Let set while you make meringue. MERINGUE: 4 egg whites 1/4 tsp. cream of tartar 1/4 tsp. salt 1/2 tsp. vanilla 1/2 c. sugar Combine all meringue ingredients and whip with mixer on high speed until stiff peaks form. Top pies with meringue. Bake for 10 minutes at 350 degrees. |
