INDIAN PUDDING | |
4 c. milk 1/2 c. cornmeal 3/4 c. molasses 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. ginger 1/4 tsp. nutmeg 3 eggs, well beaten 1/2 c. raisins (optional) Preheat oven to 325 degrees. Butter a 2-quart baking dish. Heat milk slowly in top of double boiler. Slowly add cornmeal and cook over boiling water for 15 minutes, until mixture thickens, stirring occasionally to prevent lumps. Remove from heat. Add molasses, salt, spices, egg, and raisins. Pour in buttered dish. Bake for 1 to 1 1/2 hours, until pudding is lightly browned on top. Serve warm or cold with whipped cream or vanilla ice cream. Serves 8. |
