BUTTERMILK PANCAKES 
1 c. reg. flour
1/2 c. yellow cornmeal
1 c. rolled oats
2 tsp. baking soda (or 2 tbsp. baking powder)
1/4 tsp. salt
2 eggs
1/2 c. corn oil
3 c. buttermilk

Mix dry ingredients then add eggs, oil and buttermilk. Let batter stand 15-30 minutes.

Bake on waffle iron.

Delicious with fresh fruit and yogurt or syrup. Makes about 12.
