BEEF STROGANOFF 
1 1/2 lbs. beef tenderloin
2 tbsp. clarified butter or oil
1 c. diced onion
3-4 tbsp. flour
1/4 c. white wine
1 c. beef broth
1/2 tsp. paprika
1/2 tsp. salt
1/4 tsp. garlic powder
3/4 lb. sliced mushrooms
3/4 to 1 c. sour cream

Cut meat into 1 1/2 inch pieces. Saute meat in butter or oil. Add onion, saute, sprinkle with flour. Add wine and broth, stir to combine. Add seasonings and simmer until slightly thickened. Add mushrooms and cook until tender. Stir in sour cream and serve.
