POLYNESIAN CHICKEN 
3 tbsp. butter
1/8 tsp. pepper
1/8 tsp. ginger
1 tbsp. soy sauce
1 tsp. dry mustard
1 chicken, cut into pieces
1 (8 oz.) can pineapple chunks
1 chopped green pepper
1 can mandarin oranges, drained
2 tbsp. cornstarch
1/4 c. vinegar
2 tbsp. brown sugar

Melt butter and add pepper, ginger, soy sauce, and mustard. Place chicken in shallow baking dish. Brush with previous mixture. Bake 45 minutes at 350 degrees. In saucepan, heat until boiling, pineapple, green pepper, oranges, cornstarch, vinegar, and brown sugar. Bake 15 minutes. Serve with saffron rice and green salad.
