SWEET PEPPER SALAD - Sladky

8 green peppers
2 c. water
2 tsp. prepared mustard
2 tsp. sugar
1 tsp. salt
2 tbsp. vinegar
1/2 c. olive oil

Wash the peppers and cut into quarters, discarding the seeds and fibers. Place in a saucepan with the water. Boil for 20 minutes, or until tender. Drain and cool in the refrigerator for 1 hour. Combine the mustard, sugar, salt, vinegar and oil in a bowl and mix well. Pour over the peppers. Marinate for 2 hours. Serve cold.
