PEPPER SALAD 
1 tbsp. oil
4 sliced peppers
2 sliced onions
1/2 tsp. oregano
Dash pepper
1 tsp. sugar
2 tbsp. red wine vinegar

Saute peppers and onions in oil (a Teflon pan is best). When the vegetables are almost tender add the rest of the ingredients and cook until the vegetables are tender. This is good either hot or cold.
