COFFEE CAKE RING
2 c. milk, scalded
2 pkg. yeast
3/4 c. shortening
1/4 c. butter
1/2 c. sugar
2 tsp. salt
4 egg yolks (or 2 eggs)
6 c. flour, sifted

Cool milk until warm. Sprinkle yeast over top. Let stand to soften. Cream shortening and butter, add sugar and salt. Cream together. Add eggs, yeast, milk, and flour to make a soft dough. Knead until smooth and elastic. Place in greased bowl. Cover and let rise until doubled.

Roll dough thin about 1/4 inch and cut into rounds with 2 inch biscuit cutter. Dip each in melted butter, then cinnamon-sugar mixture of 2 teaspoons cinnamon and 2 cups sugar. Stand up in 2 well-buttered ring molds. Let rise until light, about 1/2 hour. Bake in moderate 350 degree oven for 25 minutes. This makes 2 tube pans full.
