TURKEY PARMESAN 
1/4 c. all-purpose flour
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. seasoned dried bread crumbs
1/3 c. grated Parmesan cheese
1 lg. egg
6 turkey cutlets (about 1 1/2 lbs.)
3 tbsp. salad oil
1/2 (14 oz.) jar marinara sauce
1 (4 oz.) pkg. shredded Mozzarella cheese (1 c.)

About 30 minutes before serving:

1. On waxed paper, mix flour, salt, and pepper. On another sheet of waxed paper, mix bread crumbs and Parmesan cheese. In pie plate, with fork, beat egg and 2 tablespoons water. Coat turkey cutlets with flour mixture, egg mixture, then crumbs.

2. Preheat oven to 400 degrees. In 12 inch skillet over medium high heat, in hot oil, cook 3 turkey cutlets at a time until browned on both sides, removing cutlets as they brown.

3. Spoon marinara sauce over turkey cutlets. Bake 10 minutes, sprinkling with shredded Mozzarella cheese during last minute of baking time. Makes 6 servings.

Each serving: About 350 calories, 16 g fat, 122 mg cholesterol, 765 mg sodium.
