TURKEY PARMESAN 
1/4 c. all-purpose flour
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. seasoned dried bread crumbs
1/3 c. grated Parmesan cheese
1 lg. egg, beaten with 2 tbsp. water
6 turkey cutlets (about 1 1/2 lbs.)
3 tbsp. salad oil
1/2 of 14 oz. jar marinara sauce
1 (4 oz.) pkg. Mozzarella cheese (1 c.), shredded

On waxed paper, mix flour, salt and pepper. On another sheet of waxed paper, mix bread crumbs and Parmesan cheese. In pie plate, with fork, beat egg and water. Coat turkey cutlets with flour mixture, egg mixture, then crumbs.

Preheat oven to 400 degrees. In 12 inch skillet over medium high heat, in hot oil, cook 3 turkey cutlets at a time until browned on both sides, removing cutlets as they brown. Spoon marinara sauce over turkey cutlets. Bake 10 minutes, sprinkling with shredded Mozzarella cheese during last minute of baking time. Makes 6 servings.
