RONNIE STRUBHART SIDER'S
CHRISTMAS CAKE
 
1 lb. gumdrops (fruit flavored, no black ones)
2 c. golden raisins
1 1/2 c. pecans, chopped
2 c. flour

If gum drops are large, cut into 4 pieces. Combine all above ingredients in a paper sack and shake well until everything is well coated with flour. Set aside.

Batter: Mix in order listed: 1 c. sugar 2 eggs 1 tsp. of soda mixed in a tablespoon of hot water 1 1/2 c. sweetened applesauce 1 tsp. each cinnamon, cloves, and salt 2 c. flour

Mix batter until well blended. Stir in the paper bag ingredients, and continue to stir until it is well mixed. Put batter in a line angel food cake pan that has been greased and floured. Put cake in cold oven and turn oven on at temperature set at 300 degrees for one hour. After one hour turn oven temperature down to 250 degrees and bake until done. About 45 minutes. Cake should spring back when touched in center of cake. Don't overbake. Makes a very colorful cake for serving. Family tradition at Christmas based on "The Little Black Sambo" storybook.
