1 pkg. lime flavored gelatin
3/4 c. hot water
1/4 c. lemon juice
1 tsp. grated onion
1 c. sour cream
1 c. chopped unpeeled cucumber (use the long thin cucumber without seeds)

Dissolve gelatin in hot water. Add lemon juice and grated onion. Chill until partially set. Add sour cream and cucumber. Stir until combined. Pour into 6 individual molds and chill until set.
