A LA BEEF LINDSTROM 
1/4 lb. minced or ground beef
2 boiled potatoes, mashed
2 egg yolks
6 to 8 tbsp. cream
2 pickled beets, finely diced
1 1/2 tbsp. onions, finely chopped
2 tbsp. capers, finely chopped
salt
pinch of white pepper
pinch of paprika
3 oz. butter

Mix minced beef with mashed potatoes and egg yolks; gradually stir in cream. Add diced beets, onions and capers. Stir carefully and season with salt, paprika and white pepper. Shape into round, flat cakes about 1-inch thick and fry in hot butter over medium heat for 3 to 4 minutes on each side. Serve with fresh vegetables.
