ZUCCHINI CAKE 
3 eggs
1 c. oil
1 c. white sugar
1 c. dark brown sugar
2 c. grated zucchini with skins
2 c. plain flour
1/2 tsp. salt
1/4 tsp. baking powder
2 tsp. baking soda
1 tsp. cinnamon
1 tbsp. vanilla
1 c. black walnuts

Preheat oven to 325 degrees. Combine all ingredients and mix well. Grease and flour bundt pan well. Pour into bundt pan and bake for 1 hour. Let cool and remove from pan. Frost or sprinkle with powdered sugar. Serve and enjoy.
